I love making this recipe on Sunday and eating it through out the next week. It makes a lot and is easy peasy to put together.
1 to 2 lbs ground turkey
1 large onion, chopped
1 can pinto beans, drained
1 can great northern beans, drained
2 cans black beans, drained
1 Large can of chicken broth (mine was like 48 oz)
1 can Rotel tomatoes
1 can tomatoes, Mexican style
1 pkg of taco seasoning. I used hot as we like spicy.
1 pkg original Hidden Valley Ranch Dressing (dry)
Brown turkey and onion with a little olive oil. Mix all the rest of the ingredients in and simmer for an hour or two.
Great topped with gauc, sour cream, greek yogurt, or cheese!
