A cheesy twist on regular meatloaf!
Ingredients:
- 1 lb lean ground turkey
- 1 cup low fat cottage cheese
- 1/4 cup liquid egg whites
- 1 cup veggies, finely chopped (I used broccoli, onion, and mushrooms)
- 1/4 cup tomato paste
- 1 tbsp mustard
- 1/2 cup of oats
- 1 tsp salt
- 1/8 tsp pepper
- dash of oregano, basil, and minced garlic
Simply combine all ingredients and press into an 8 inch square baking pan. Bake at 350 for 30-40 minutes. Top with ketchup and mustard if desired. Devour!

Wow, this is so interesting! I have made 2 types of meatloaf, both were yummy, but this one I bet is amazing! Can you taste the cottage cheese or does it just add bulk?
you can’t tell from my picture (mainly because I doused it in ketchup and mustard, LOL.) but the cottage cheese definitely gets cheesy and gooey once it is baked!
