Do you ever get a craving for some Mcdonald’s nuggets? Well, I don’t. LOL. But I do definitely love chicken nuggets and have a very easy way to make my own.
So here’s a recipe that is perfect for Sunday Food Prep Day!

Baked Chicken Nuggets
Ingredients
- 20 ounces chicken breast, thawed and chopped into nuggets
- splash of egg whites
- 1/4 cup wheat bran
- 1 tbsp almond flour/meal
- 1 tbsp flaxmeal
- desired seasonings—garlic powder, onion powder, seasoning blend, chili powder, smoked paprika, salt, pepper
Directions
Preheat oven to 350 degrees. After chicken is chopped up, pour a splash of egg whites on top and get all the pieces lightly covered. Combine dry ingredients in a bowl. Add in chicken pieces and mix until all pieces are evenly coated with the mixture. Place on a baking sheet and bake for approximately 15-20 minutes. Makes 4-5 servings.
One way I served mine:

with roasted broccoli slaw pasta, fresh basil, and marinara. Plus a baked japanese sweet potato with a cinnamon swirl laughing cow cream cheese.
These little guys are tender on the inside, with a crispness on the outside. I love them! They keep well in the fridge, so I like to make a lot at once to eat throughout the week.

I don’t know why I’ve never thought about making these. I wonder what I could use that’s gluten and oat free…chia seeds? lol
just use almond meal and flax meal!!! I have done it that way with great success.

Yep, I prepped all my food today =) 5lbs of chicken, 3lbs of tilapia, 5lbs of veggies… now I just need to bake my salmon! It should all last me through Thursday!!
Oh man chicken nuggets were like my go-to meal at restaurants when I was a kid. Glad I changed my ways – most of what’s in those fast food nuggets isn’t even chicken, eww.
But these look awesome! Anything with almond meal is normally delish IMO.
I whip up a batch of healthy cookie dough/protein/lara bar type balls every week for snacking on – I love all the ball recipes flying round the blogworld!

Isn’t that disgusting? That is why I like making my own food: I know exactly what goes into everything! And I agree that almond meal makes most things pretty darn tasty!
