Cranberry Apple Cinnamon Squares

Ingredients:
- 1 cup ground oat flour (or flour of choice)
- 1 cup rolled oats
- 2 heaping scoops vanilla protein powder (60 grams)
- 1/2 cup blended cottage cheese
- 1/2 cup greek yogurt
- 3 egg whites
- 1 large diced apple
- 1/2 cup cranberries (frozen work great)
- 2 tsp cinnamon
- stevia to taste (or other sweetener of choice)
- 1 tsp baking powder
- dash of salt
- almond milk, added until batter-like consistency (will depend on type of protein power you use. start with 1/4 cup, adding more if needed)
Directions:
Preheat over to 350 degrees. Combine dry ingredients, then slowly incorporate wet ingredients. Pour into baking pan and bake for approximately 25-30 minutes. As always, oven times will vary, so watch carefully so you don’t over-bake. I like to pull it out once the top has mostly set, but it’s still nice and moist on the inside. It will continue to firm up when you leave it out to cool, and even more once you put it in the fridge.
